Bacon & Mushroom Quiche

Pastry Ingredients

6oz Plain flour
3oz Butter or margarine
Pinch of salt
Cold water

Preparation method

Sift the flour and salt into a bowl and add the butter. Using your fingertips, rub the butter into the flour
until the mixture resembles fine breadcrumbs. Add a little water. Using a knife, mix together until the
mixture holds, add a little more water if necessary. Gather the dough together and knead. Roll it into a
ball and place in the fridge for twenty minutes. Roll out the pastry to line an eight inch flan case.

Mixture Ingredients:

2oz butter
1 large finely chopped onion
6 mushrooms, chopped
4oz streaky bacon, chopped
2 large eggs
2oz grated Wexford Cheddar cheese
¼ pint Wexford milk
¼ pint Wexford cream

Preparation method

Melt the butter in a frying pan, add the onion, mushrooms and bacon and fry until golden. Cool
slightly and add to flan case. Beat together the eggs, milk and cream and pour into the flan case. Spread
the grated cheese over the top. Bake in preheated oven at 180°C/350F/Gas mark 4 for forty minutes.
