Ginger bread



700g Plain flour
2 Level teaspoons bread soda
2 Level teaspoons mixed spice
4 Level teaspoons ground ginger
200g Soft brown sugar
12 Tablespoons corn oil
2 Beaten eggs
Approx. 250ml Wexford Creamery low fat milk
400g Treacle

Preparation method

Preheat oven to 350 degrees. Lightly grease three 2lb loaf tins. Sift flour, bread soda and spices together
and then stir in the sugar. Warm treacle, add oil, eggs and milk and stir well. Pour all at once into
the sifted dry ingredients and beat well. Pour into the prepared tins and bake for about one and a
quarter hours or until a skewer inserted in the center comes out clean. Allow to cool and store in
airtight tins. This recipe also freezes well.
