"Hi, I know this is going to sound a little crazy, but just wanted to pass on a compliment about your cheeses. We have a cat called "Tiger" who adores Wexford Cheese. He had an accident which left him with 3 legs. He doesn't drink much milk so needs his calcium. He miaows at the fridge every night and rolls on his back (which means he would like some cheese) and the second the smell of it hits the air he is there!! It's come to the stage now when we can't have crackers and cheese in peace without having to share them with Tiger. So basically he is a huge fan and his favourite is Red Mild and Creamy. We hope this brings some light hearted enjoyment to you and on behalf of Tiger, keep up the good work."

Here in Wexford, we’ve been making some of the world’s best cheddar cheeses for around half a century. Our range has been especially designed to delight the palate of all of our customers, whether they’re a mild & creamy fan or a vintage lover.
Mild & Creamy
This cheddar is pale yellow in colour and has a deliciously smooth flavour. A favourite with kids, it is also available as a red cheddar.
Rich & Mature
A smooth bodied cheese with a full rich flavour and a hint of sweetness.
Strong & Vintage
A full-bodied cheese with a reassuringly robust and lasting flavour.
Vintage
Our mouth watering vintage cheddar has been maturing for over 2 years. This cheese has a crisp, clean flavour with an appealing sharpness and a slightly crumbly texture.

Wexford Creamery’s cheddars – Wexford Mild & Creamy, Wexford Strong & Mature, Wexford Vintage, were all recognised for their excellent standard and high quality.
Our world beating cheddar has brought home 6 medals and 2 trophies this year including the coveted Kerrygold Trophy which was awarded to Wexford Creamery for the third year running, crowning us as the best cheese makers in the whole of Ireland 2008.

Cheese, as well as being delicious, is a wonderful source of many valuable nutrients - protein, calcium, vitamin B, zinc, magnesium and phosphorous. 28g of cheddar will provide just over 7g of protein, while supplying a little over 200mg of calcium.
The casein in the milk used to make cheese is a useful protein in supporting health, since it contains essential amino acids. The phosphorus in cheese is one of the vital minerals needed for a healthy body.
It takes about 10 litres of milk to produce a kilo of cheese, and almost all the nutrition in that original source is preserved in the final product. For the most part, making cheese from milk leaves the original vitamins and minerals intact.
You'll need to take some care to get the best nutrition that cheese has to offer. Long term storage should be between 35-40°F and the product should be well wrapped during refrigerated storage. Once exposed to air, both temperature and organisms will quickly act on the cheese. Flavour is lost quickly as the air dries out the cheese and certain harmless but distasteful moulds can grow on the surface quickly.
Cheese should be served at room temperature to bring out the full flavour.
